Spanish Cheese – Manchego

Manchego cheese is made from milk from sheep. It is produced in the La Mancha region of Spain. The milk used for the cheese is exclusively from the manchega sheep. Once the cheese is made it is aged in caves for 3 to 6 months. The taste of the cheese is distinct, a little salty but not too strong. The cheese taste similar to feta Cheese but less salty. A similar type of this cheese is made in Mexico, The production is not as regulated as the Spanish Cheese, this cheese is melted and used in quesadillas.
